The curry was a little milder than I would have liked, but overall this was great. Next time I would replace the beefless strips with tofu to introduce some more texture into the dish.

Long, Cold Week
Last Sunday I met my friend Natalie at Pizza Fusion in Naperville. They serve vegan pizzas with Follow Your Heart Cheese (I am pretty sure this is the cheese they use). We ordered a "Very Vegan" pizza that had roasted garlic and mushroms and a "Farmers Market" with assorted veggies (pictured). The pizza is pretty good, but it is a bit pricey and I feel that I can make just as good pizza at home.
One morning this week my hubbub made blueberry pancakes. Yum!
This is Maple-Mustard Potatoes and String Beans from Vegan with a Vengeance. They came out really delicious. I will be making this again for sure.
Tomorrow I am going to visit my sister and we are planning on making a day trip to Springfield on Monday (I am off work for Martin Luther King Jr. Day). I've never been to Springfield and I'm looking forward to checking out the Lincoln museum!

Weekend Roundup
Earlier this week I made Curried Cauliflower and Kale from macheesmo.com .This came out really yummy. I will definitely be making it again.
On Saturday night I put together a taco fiesta for the hubbub and myself. Yum! We had Fantastic Foods Taco filling, black beans with garlic, Tofutti sour cream, garlic salsa, homemade guacamole, lettuce, tomato and onion. The only disappointment was the brown rice tortillas I had bought. They broke when we tried rolling them. Tortilla chips to the rescue!
After dinner I really wanted dessert, so I made a half batch of chocolate chip cookies (recipe from Vegan with a Vengeance). Delicious, as always.
This afternoon I am meeting my friend for window shopping and lunch at Pizza Fusion. I’ll post the pizza review tomorrow.
P.S. The husband starts nursing school tomorrow! Good luck!!

WF 365 Vegan Pizza Review
When I took the pizza out of the box, it smelled strongly of the balsamic vinegar. I noticed that it was a bit smaller than the Trader Joe’s version and the crust was definitely thinner. I don’t think the other two have the mushrooms, so I was excited about that.
After a few minutes in the oven I was ready to try! Sadly, I was disappointed. The pizza had way too much vinegar. The mushrooms were soggy. The crust was very thin. My husband couldn’t even finish one slice!
Looks like we will be sticking to the other versions of this vegan pizza.

Mid-Week Blues(berries)
Monday morning my husband made hot bulgur wheat cereal. I added blueberries, maple syrup (too sweet), and walnuts. I enjoyed it alongside a soy latte. This was sooo good. I don’t know why I don’t eat hot cereal more often.
I try to bring healthy foods to work. My theory is that I only have one option in my lunch bag, so it should be a healthy choice. On Monday I made a salad with lettuce, flax crackers, sprouts, avocado, and a squirt of lemon. I also had an apple.
It was really tasty, but I was STARVING by the time I got home. I fried up some eggplant, added crushed tomatoes, and served it over pasta. Eggplant is not my favorite, but it was on sale. I sprinkled vegan parmesan on top.
The meal came out ok, but I ate WAY too much. I had to stay up and wait for it all to digest! Oh well, live and learn.

Hello Sunshine!

I am really looking forward to see what 2010 has to offer us. My husband is starting nursing school in a week. My goal is to go on more adventures and be less stressed about work (recreation is not all fun and games)!
I LOVE reading blogs and thought it would be fun to start my own. My main focus will be on vegan cooking and eating out, with a few other tidbits thrown in. To get started, here is a picture of the salad I had for dinner: hearts of romaine, baby lettuce mix, sprouts, red onion, a sunshine burger and a squirt of lemon.
